Kimchi

My latest batch of kimchi / kimchee fermenting nicely. I don't have a recipe as such—I learned how to make it a few months ago by mixing and matching from various recipes on the internet, and adding my own variations. I'll try to write out a recipe and post tomorrow.

It may look a bit dodgy, but everyone who's tried it loves it!

The horse IS gorgeous!!..... And as far as Kim-chi goes, keep it in the ground for 4 months, and THEN try it- It will smoke your oysters, I'll tell you that-I love ANYTHING HOT, or spicy- Kim-chi, Jalepenos, Habaneros, Green chiles, and 'Ghost' peppers, and anything like it-
